Basque Chicken


Preparation: 15 minutes
Cooking Time: 40 minutes
Very easy

Ingredients (for 6 people):

- 1 chicken cut into pieces
- 1 large onion
- garlic
- 10 green Espelette chilli peppers
- 2 peeled peppers without their seeds
- oil
- 6 peeled ripe tomatoes without their seeds
- bay leaf
- thyme
- parsley
- salt and pepper
- rice


Preparation

1. In a large pot, fry the onion in a little oil along with the chopped garlic and all the peppers cut into slices.

2. Then add the chopped tomatoes, the chicken, bay leaf, thyme and parsley. Add salt and pepper.
Leave to simmer with the lid on for about 40 min.

3. Half way through, add the rice so that it soaks up the flavours.

4. Check whether the chicken is properly cooked, and continue if not.
