Prunes in Armagnac


Preparation: 10 minutes

Leave to stand: 12 hours

Ingredients:

- 500 g of dried prunes
- 200 g of sugar
- ¼ litre of water
- ½ litre of Armagnac
- 1 lemon
- 1 clove of vanilla
- hermetic jars


Preparation

1. Melt the sugar in water on a low flame. Add a zest of lemon and the clove of vanilla split in two. When this mixture becomes clear and starts to boil, remove from the heat.

2. Pour this syrup onto the prunes. Cover with a cloth and leave to macerate for 12 hours.

3. Remove the zest and the vanilla. Place the prunes in a jar which has been placed in boiling water and dried. Mix the syrup with the Armagnac and pour it over the prunes.

4. Close hermetically. Leave to stand at least one month before consuming.
