Ingredients (for 6 people):
- 250 g of flour
- 125 g of butter
- ½ glass of water
- 1 pinch of salt - 1 kg of apples
- 125 g of sugar
- 10 cl of Armagnac
- 1 soupspoon of orange-blossom water
- 1 sachet of vanilla sugar
1. Form a hollow in the middle of the flour and incorporate the salted water gradually. Form a lump then roll the pastry on a floured table.
2. Divide the butter equally over the whole surface, fold over the four corners and leave to stand for 20 min.
3. Peel and cut the apples into thin slices, sprinkle them with the vanilla sugar, and soak them with Armagnac and orange-blossom water. Stir well to make sure the apples are impregnated.
4. Roll the pastry once more and fold it into three. Repeat 6 times, leaving to stand between each operation.
5. Rub butter onto the baking tin. Roll part of the pastry and place on the bottom of the tin. Add the apples and cover with the rest of the pastry. Join the edges together using a flour-covered fork.
6. Bake for 30 min in a medium oven. Add sugar once baked.
